This is one of our "un-recipes" as it came together one night when I was deciding on what to make for dinner. I looked in the fridge and this came to life!
The amounts listed below are estimates as I wasn't on planning this to be a true recipe but decided it was worth sharing!!
Prep time: 10 minutes
Cook Time: 30-40 minutes
Ingredients:
1 pint of small tomatoes
1/2 red onion, sliced and halved
1 medium yellow squash, quartered
1 medium zucchini, quartered
8-10 spears of asparagus, cut into thirds
4-6 gloves garlic, minced or sliced
~1/2 cup kalamata olives, halved
~1/2 cup crumbled feta cheese
Gracious serving of extra virgin olive oil
1 tbsp. Italian seasoning mix
6-9 ounces salmon filets
Salt to taste
Lemon slices
Directions:
Preheat oven to 425 degrees.
Combine all vegetables, olive oil, seasoning, and feta cheese in a baking dish. Mix well to cover with olive oil and seasoning.
Place salmon filets on top of veggies, sprinkle some additional Italian seasoning mix and top the filets with the sliced lemons.
Bake for 20-40 minutes depending on the thickness of the salmon filets.
Modifications and Tips:
Use any veggies you want!
Swap the salmon for any other fish--just be sure to adjust your cooking time accordingly
Swap the salmon for chicken.
Swap Italian seasoning for Greek seasoning.
