Ingredients:
3 small sweet potatoes, peeled and diced (about
3 cups)
1 pound ground turkey
1 cup bell peppers (any color)
1 red onion, diced
½ cup water
¼ cup cilantro, chopped
2 Tbsp coconut oil
1 ½ Tbsp ground cumin
1 Tbsp garlic, minced
1 Tsp chili powder
1 Tsp salt
¼ Tsp pepper
Directions:
In a large skillet, heat coconut oil over medium-high heat. Add garlic and cook for 1 minute then add ground turkey. Cook the ground turkey until browned.
Add cumin, chili powder, salt and pepper. Mix well
Add chopped onion and bell peppers. Cook for 3-4 minutes. Add diced sweet potatoes and water. Stir and cover with a lid for approximately 6-8 minutes until the sweet potatoes are softened.
Remove pan from heat and top with fresh cilantro. You can also top with mozzarella cheese if you desire.
